Friday Five 1.22.2021: 5 Things I've been cooking lately

I have a nice collection of cookbooks but every now and then I like to try recipes I’ve found on pinterest or Instagram. Here are 5 recipes I’ve tried lately and LOVED. If you’re stuck in a cooking rut or looking for something interesting, you may enjoy these!

  1. Chicken Cilantro Soup by Ministry of Curry: This recipe uses an Instant Pot, but I was being lazy and used a normal pot instead and the recipe holds up just fine. The addition of cilantro stems to the broth makes it extra delicious and I will be using this herb stem trick in all broth moving forward.

  2. 20-minute Honey Garlic Butter Shrimp: If you need something quick, easy and delicious, this recipe is all of those things.

  3. Instant Pot Black Chickpea curry: If you find Black chickpeas (your local Indian grocery store will have them) this is the perfect wintertime meal, but you can also make these with regular chickpeas. I skipped the paneer in this recipe, although if you’re going to your local Indian grocery, you might as well buy some paneer there too. You can also buy paneer at Whole Foods, or skip it entirely, or sub out tofu. So many choices!

  4. Dutch Baby: if you’ve never made a Dutch Baby before, I highly encourage you to grab your cast iron skillet and make this recipe. I like mine with cinnamon sugar, but you can eat it savory too!

  5. Classic Tiramisu: I made this on New Year’s Eve and ate it long into 2021. So simple, so classic, so delicious and so easy.
