Talking Food: Last Meals & Essential Ingredients

Like a lot of you, I’m listening to a lot of podcasts lately, including ones that are interview style podcasts. And some of them have a few standard questions they ask their guests. Since I’m not a guest on those podcasts, I don’t get to answer them, but I think the questions are super interesting either way.

And so I figured I would give you my answers, and ask you for yours!! Drop me your answers in the comments!!

What is your ideal 3-4 course special meal?

I’m going to have to use 4 courses for this one, the first being a little amuse bouche of briny oysters with fresh squeezed lemon and tabasco, maybe even a little caviar on top.

My second course would be my favorite Indian street food - pani puri. This is called different things in different parts of India, but in Mumbai, it’s a small puffed wheat cracker, filled with potato and sprouted mung beans, and dipped in a spicy water, and then you put the whole thing in your mouth.

My entree would be Burmese curry called Khao Suey or Khao Swè, which my family makes with goat or lamb, although I’ve included a recipe for the vegetarian version. If you want to try making this at home, you can just sub out all the veggies for chicken or lamb.

And finally, dessert would be an assortment of gelato or my friend Alexa’s lemon bars with vanilla ice cream.

For all of you cooks out there, what 3 ingredients are your must-haves in the kitchen?

I spent a long time thinking about this one, and I couldn’t decide what would be the most versatile, and I finally settled on the following: chickpeas, olive oil, and red onion.
